Time to get my son involved in the hobby. Or at least, let him have enough exposure to make up his own mind.

So ... should I buy him something like a HE army (to be different than what I have) or buy him an Empire army (since I have that one and it would just add to my 3k army should he decide he wants to do a diff army)?

Regardless of which, if he likes the hobby - GREAT!

If he doesn't dig into the hobby yet, I have +minis.

Hmm ... I'm not in a rush to start a new army although of course that is fun.
Adding more to what I have is only useful if there are other players with 3k+ to play against!

Thoughts on what you all have done to help someone/son get enough exposure to the hobby?

I would say it really depends on what he likes.

If he likes knights, chivalry, i would say bretonnia (but very expensive those days). If he likes fun and monsters, orcs and gobs.

If he likes dwarves, etc...

I would say, anyway, that High-Elves would be a good idea, for the army is one of the easiest to use i think. Orcs are fun and easy to play too.

If the choice is HE or Empire I recommend high elves, they have more different types of troops ( flyers. Chariots)

An alternative for Empire would be an expansion to witch Hunters to have more Gaming options
Armies ready for battle - Empire, Chaos, Dwarves, Skaven, Bretonia, Araby, Witch Hunters
Armies in recruitment - Orcs & Goblins, High Elves, Dogs of war

I would suggest going with the High Elves idea.

I get the temptation with Empire, so that if he bails you can use the models, but the High Elves will feel more 'his'. There'll be more of a feeling that they are his army, which should help him bond with them more and stick to the game.

If he bails anyway it's easy enough to play a 4000+ pt game with an Empire/High Elf alliance.

Based on a similar family experience, I would recommend HE.  Mixed force with a very forgiving Cmd 10 general!  Other suggestions have been made but I have Witch Hunters and they're hard work even for an experienced player.  Because of poor command values an O&G force could be frustrating for a beginner.

I've been attempting to teach 11 yr old kids by having different 500 point armies.  Currently I have 6 x 500 point armies and the kids can choose whichever army they want to play  At our last game, one of the kids asked when the armies would be getting bigger, so I think they are learning.  My plan is to have at least 4 out of the 6 armies at 750 point by the next scheduled game day.
