I have been eyeing the amazing Onslaught Miniatures.

But are any of the ranges large enough to make a full Tau / Sisters / Tyranid army?

It looks like I'd need a bunch of Tau fliers and those don't come cheap on eBay, alas.

I'd say Onslaught has a bit to go if you want to proxy full Epic armies. Tau would need light vehicles and fliers indeed. Sisters aren't even released yet. Tyranids would need the larger creatures and titans. That being said, I'm positive that it will be possible to proxy with a full Onslaught army in the future. In the mean while there are other alternatives that can stand in for the future proxies. :)

the top UK tyranid player (at least in EpicUK tournaments) only uses a pair of harridans in his tyranids, the rest is all swarms of small stuff, termagaunts, hormagaunts, genestealers and gargoyles, plus with some creative conversion work you can make damn good proxies for the bigger beasties from 40k kits, like these or these

There are decent tau proxies in the DRM range, the kraytonians have some small skimmers which work as pirhanas and tetras, their flyers would work as barracudas too imo... depends how close you want the models to look to the GW ones really....

We've been seeing plenty of Firestorm Armada ships doing duty as Tau flyers recently.

I guess I'm too fussy, and really want things to look 80% like GW stuff at least. =-X

You're out of luck in my opinion Stormwind.  I think that most of the proxies for the more exotic races in particular are not very good at all.  Your best bet is to keep searching for the original models on e-bay.

Onslaught will be releasing light recon skimmers for their OTC line very soon, with their addition you've got all you need to make an effective Tau army I reckon, and they're really close to the GW aesthetic..... you can get them in the UK from www.exoduswars.com
